Curried Carrot Soup

This recipe an easy recipe for a healthy and delicious curried carrot soup that has a bit of a spice.













Curried Carrot Soup Ingredients:

  • 1 tablespoon Avocado or Olive oil
  • 2 tablespoons butter
  • 1 onion chopped
  • 1 1/2 pounds carrots
  • 6 cups chicken stock
  • 1 1/2 tablespoons curry powder
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt


Chop Onion and Carrots.  Heat pot over medium high.  Add avocado oil, butter, onions, carrots and saute 5 minutes (medium high).  Add 6 cups chicken stock, curry, cayenne, and salt.  Bring to a boil and cook until carrots are tender (about 15 min).     Finally, put the mix into the blender and puree.  Now you have a delicious Curried Carrot Soup for a healthy diet.
