Taco Meatloaf, a flavorful & easy meal
Taco meatloaf recipe is very flavorful, easy, and versatile meal for a busy lifestyle. Ingredients are simple and prep is a snap. You can do variations by adding it to lettuce for taco salad or use a tortilla for a taco or burrito filling. Taco meatloaf would comfortably feed a family of 5 or have leftovers for an easy meal on another day. I came up with this recipe after searching for a taco meatloaf recipe and only found ones that included items that you’d never find in an actual taco like ketchup, whole cream, and Worcestershire sauce. This recipe includes ingredients that are flavorful and easier prep than those offered anywhere else online. Enjoy!
You’ll need:
Taco Seasoning if you don’t have all the spices in your pantry, you can use a store bought taco seasoning as a substitution. If you have some but not all, go ahead and make your own variation of taco seasoning.
- 1 package Ground Beef 1.34lb
- 2 eggs
- 1 can 15oz Black beans
- 1 can 14.5oz Diced Tomatoes
- 1/4 cup diced onions
- 1/2 cup Almond flour or Rolled Oats
Directions:
- Make 1 batch Taco Seasoning mix
- Dice 1/4 cup onion
- Drain can of black beans
- Drain can of diced Tomatoes
- In a large bowl, thouroughly mix all the ingredients together
- Pre-heat Oven to 350
- Put mixture in a large oven safe container
- Bake for 1 hour 10 minutes
Serve taco meatloaf with salsa, cheddar cheese, tortilla chips, even sour cream for a Mexican inspired meatloaf that is delicious. Have leftovers for the next days lunch or dinner again. This is a very easy meal that could become a regular item to your meal plans.
